Thick and Creamy Grits

Hello Everyone! I don’t know about you, but I love a southern style breakfast!  It’s nothing better than having fried fish, grits and eggs to start off your day.  So I  wanted to share with you this morning how to make thick and creamy grits.  It’s really easy and you won’t be disappointed.  You don’t need many ingredients at all.  So let’s talk about what’s needed.

  • 1/4 cup of Heavy Cream
  • 1/4 cup of Half and Half ( You can also use 1/2 cup of half and half and leave out the heavy cream)
  • 1/2 cup of water
  • 1/4 cup of Grits
  • 1 ounce of cream cheese
  • 1/4 cup of shredded cheddar (optional) (I actually used the Mexican blend)
  • 1  scallion chopped up (optional)

Pour the heavy cream, half and half,  and water into a small sauce pan. Heat the liquid until it begins to simmer.  Do not boil it ! That will become a hot mess.

Once the mixture begins to simmer, dump in the grits and whisk!

Turn down the heat to very low and cover.  Let them cook for 15-20 minutes whisking occasionally until the all the liquid has absorbed and you have a creamy thick mixture.

Turn off the heat and add the cream cheese. Whisk until the cream cheese is completely melted and blended.

Pour the grits into a pretty bowl, top with cheese, garnish with scallions and enjoy.

Taste yummy doesn’t it???
