Black Bean Salad
- 1 can of Corn
- 1 can of Black Beans
- 1 Tbs Olive Oil
- 1 Tbs. Red Wine Vinegar (or White Vinegar)
- 1 Tomato
- 3-4 Scallions
- 1/4 Red Onion
- Fresh Cilantro to taste
- lime Wedge
- Course Salt
- Black Pepper
Black bean salad is so yummy and good for you too! It has a nice light taste and covers the veggies and the protein all at once. Besides it tasting so good, I decided to post this recipe in lieu of February being Heart Disease Awareness Month.

Beans are rich in soluble fiber and take the body longer to digest than other foods, states Harvard Medical School. Soluble fiber turns into a gel-like substance when digested. The fiber absorbs fat and cholesterol, which helps heart health. A person will also feel full faster when eating beans; a benefit for someone who is attempting to reduce weight. Healthy bean options include kidney, navy, black and pinto beans. According to the USDA’s Food Pyramid system, Americans should eat several cups of beans throughout the week.

Chocolate and Flax seeds are also good things to eat to help fight heart disease.
This recipe is also super easy, all you have to do is mix everything together!
Drain the beans and the corn.
Watch the cilantro, that stuff is strong! But it’s also tasty. I took about 3-4 sprigs, took off the leaves and chopped them up. But please add a little at a time because that stuff is no joke. Also be sure to chop that Red onion up real good. Once you mix together the first eight ingredients squeeze some lime juice over the salad and add salt and pepper to taste. I served mines with shrimp on top. All I did was take the shrimp saute them with a little lime juice, olive oil and Mrs. Dash and it turned out to be delish!


I made this served with tortilla chips for a memorial day picnic and it was a huge hit! Everyone loved it. I made it again this week as a healthy salsa for taco’s and it was a delicious topping. I brought the left overs for lunch and just ate the corn and bean salsa. It’s filling and I never feel guilty after eating it cause it’s such a healthy and delicious alternative. I usually have all these easy ingredients in my kitchen which makes it convenient too. I used frozen corn instead of canned and it was still great. The second time I made it I didn’t have scallions so I increased the red onion and it was still so good!
