Bangin' Balsamic Sweet Onion Chicken serve w/ Sticky Rice and Broccoli

Yummy. This chicken was so juicy its ridiculous!

Hey Guys!  This meal is the perfect Sunday dinner meal and its pretty easy to make.  The chicken is baked so you can prepare the chicken first and work on the rest of the meal after that’s in the oven.  The sticky rice is the perfect recipe for dressing up some left over  rice in the fridge.  Jimmy made the broccoli and I’ll share his recipe for steamed broccoli its sooooo easy but I love it!  So let’s get down to business and start cooking!

Bangin’ Balsamic Sweet Onion Chicken

First we must prepare the marinade…

Whisk the following ingredients together in small to medium bowl:

  1. 1.5 cups of Balsamic Vinegar 
  2. .5 Olive oil
  3. 2 tablespoons of Brown Sugar
  4. 4 pinches of Rosemary
  5. 1 cup of chopped Sweet Onion
  6. cracked pepper
  7. 1.5 teaspoons Ground Mustard

Set the Marinade a side.  

Take the skin off of 3 large split chicken breast, spread olive oil inside a large rectangular oven safe dish and place the chicken breast in side.

 Cut slits into the chicken and then place some sliced pieces of fresh garlic around the chicken. Next, season the chicken to your liking. Below are the seasonings that I used.

Then cover the chicken withe Bangin’ Balsamic Sweet Onion Marinade.

 Cover the chicken with foil and poke a few holes in the top.

Pop that bad boy in the oven and cook for about 1hr to 1.5 hrs at 350-375 and voila!

All finished.

And now for the Sticky Rice!

Put 3 tablespoons of olive oil in a large frying pan and turn the pan on medium heat. Heat up the oil for about a minute and then add a 1/2 cup of chopped fresh scallions.

Sauteed the scallions for about a minute and the add 3 1/2 cups of cooked rice.  Then add a cup of chicken broth.

Season the rice (I used garlic pepper and garlic powder because I love Garlic) to taste.

Simmer and stir for about 5 minutes or so. And then voila!

And now for Jimmy’s steamed Broccoli………(drum roll please)

Boil 2 cups of water, salt, pepper and 1 tablespoon of butter.

Add the broccoli, cover and steam (turn the heat down low) until bright green or until your liking.

And there you have it, a delicious meal. Voila!

    This dinner is bangin’ for sure! Made it tonight!!!! Go April! Next up should be the recipe for that yummy fried chicken you make ;)
